Peacock Orchards Pecan Flour is a defatted flour. Our flour is the part of the pecan left after we make Pecan Oil. The nuts are toasted as they go through the oil expeller machine. The “flour” particles are gathered and then put through a milling machine to make a fine flour. The flour has a light toasted pecan smell. We use this flour in baking. Pecan blondies and cookies are some of our favorites. Pecan flour can be used as any other non-gluten flour. The GA Pecan Commission has helpful information about pecan flour.
