Barrel-Aged Chocolate Turtle Egg

Rich, Chewy, Satisfying.

These bite-sized, caramel-filled eggs were conceived as the offspring of two of Maybird’s most popular confections: our dark chocolate caramel pecan clusters, commonly known as turtles, and our bourbon barrel-aged dark chocolate. We start by aging our Tumaco, Colombia cacao nibs in freshly emptied bourbon barrels from our friends at R.M. Rose Distillery in Mt. Airy, Georgia until they have taken on the flavors of charred American oak and Georgia bourbon; then we craft it into delicious dark chocolate.

The eggs came about one late night when we noticed that two pecans placed together formed an almost perfect egg shape, and because our caramel turtles have been so popular, this bite-sized option was a no-brainer. To make our turtle eggs, we carefully place bourbon-infused caramel between and around two Georgia pecan halves and roll them into an egg shape, then dip each one by hand in our barrel-aged chocolate. The result is one of our most delicious confections to date, and it allows us to use our passions for chocolate making, Georgia-distilled bourbon, and famously delicious Georgia pecans to honor the beloved Loggerhead Sea Turtles who visit the beaches of Georgia’s Golden Isles each summer to lay their eggs.
