Pâte de fruit, meaning “fruit paste”, is a traditional French confection made from fruit puree or fruit juice. In the case of
this Maybird Red Wine Pâte de Fruit, it’s made from a Georgia red wine. We finish some pieces in the traditional manner
with sugar, and dip some in our “bean to bar” chocolate. We think that the natural fruitiness of our Costa Esmeraldas
chocolate pairs perfectly with the Red Wine Pâte de Fruit. The Maybird set includes both sugared and chocolate dipped
pieces.
We made a batch of pâte de fruit for sampling at the recent Georgia Wine Producers conference because we thought it could
pair well with wine. While there we spoke with some winemakers about the possibility of using juice or wine from their
wineries to make pâte de fruit. We was excited by the possibilities, and quickly picked a bottle of red wine with the desired
flavor profile and made a batch of red wine pâte de fruit. We couldn’t stop eating it, and immediately decided that it needed
a permanent spot in the Maybird lineup. We hope that you’ll enjoy it as much as we do!
