We’ve been making small batches of Cypress for years. It filled this gap in the market that consumers wanted a flavored, pasteurized cheese that was made with high quality ingredients. This cheese was inspired by the flavors of the Mediterranean. We wanted to make a cheese that was approachable, affordable, and delicious. We love eating Cypress on pasta salad or by itself with a glass of Rosé on a warm Summer day.
