Pico de Gallo Jelly captures the bright, fresh flavors of classic Pico de Gallo—ripe tomatoes, onions, cilantro, lime, and peppers—transformed into a smooth, glossy jelly with a sweet-savory balance and a mild kick of heat. Many of our staff are Hispanic, so this was a jelly that was made by them for them to show off their culinary style. The Pico has a bold, savory-sweet profile unlike traditional fruit jellies. The tangy lime and tomato notes are up front, where the onion and the cilantro are more subtle. The pepper creates a gentle pepper heat that lingers without overpowering.
