Unexpected, Sweet, Crunchy.
We grow garlic, and every bulb represents hours of work in the field. Drying, cleaning, peeling, peeling, and peeling. When we make our Roasted Garlic and Wine Drizzle, part of the process involves straining out all the solids: the roasted garlic that has been soaking in wine. When we saw this “drunken garlic” going in the trash, we thought, ‘What are we doing?’. We knew we could repurpose it into something delicious.
We adapted an old savory cornbread biscotti recipe to use the drunken garlic, and the result was a hybrid between sweet cornbread and garlic bread with a touch of rosemary. Use it with soups, salads, on charcuterie, or just as a snack by itself.
