Strawberry Crisp Homemade Baking Mix

Most people in the South are familiar with gooey Cobblers, whereas people in the North make crunchy Crisps. Using my Northern grandma’s 100-year-old Apple Crisp recipe, I created this unique, delicious, easy-to make Baking Mix. Our family grows soft, red wheat in Middle Georgia. We take our home-grown wheat and carry it to a 4th generation miller. He lifts the “gate” to the pond that powers the turbines to grind wheat with a 4-foot stone mill. We use the fresh-milled flour, add oats, brown sugar, and local pecans to make this unique Homemade Baking Mix. Add butter and strawberries to the mix and it makes a palatable experience. The sweetness of the strawberries. The crunch from the pecans. The depth of flavor that comes from fresh-milled flour. With all these fresh ingredients combined, a once typical Crisp recipe becomes a sensuous food encounter.
