My sugar cookies are mixed in small batches, hand-rolled, and cut into selected shapes. Baked until just done, they are tender and soft in the middle, with a slight bite at the edge. All cookies are topped with sweet, but not cavity-inducing, royal icing as a base. Second layers of finish details are then hand-piped or painted-on with food gel or edible markers to create the desired design.
