Barrel-Aged Dark 70% Dark Chocolate

Rich, Sophisticated, Multi-layered.

We partnered up with multiple-award winning, Georgia-based distillery, American Spirit Works, to create a dark chocolate bar that would pair well with their award-winning, double malt whiskey called, “Duality”. Because of the similarities in producing small batch whiskey and small batch chocolate with an emphasis on ingredient quality and craftsmanship, we wanted to borrow some of the distilling process in the production of our chocolate.

We started by roasting our cacao beans, then cracking and winnowing the beans to just reveal the meat of the cacao (aka, “nibs”). We soaked the nibs in barrels of Duality; once the nibs soaked in the rich, whiskey flavor, we dried them, then let them rest in the oak. Once the nibs were fully dried and aged, we ground the nibs along with organic cane sugar and a touch of organic cocoa butter to create this bar.

Our intention was not to create a whiskey-flavored chocolate–and this isn’t–it was to create a fine, complex dark chocolate that takes on rich, multi-layered flavor notes that introduce a new taste experience in dark chocolate.
