Spicy, Satisfying, Wholesome.
Mashed potatoes are one of my earliest food memories; eating them and making them. They are also a very familiar food item to everyone in the South. So, when coming up with a new empanada filling, I thought about Perogi’s (thanks to the four years I spent in Chicago) and wondered how I could make something similar that stayed true to Casa Cardoza.
I looked into different Latin American potato dishes and was reminded of Papas Rellenas. I decided simple was better for our version and chose to season our potatoes with loads of butter, dried chiles and scallions.
We then take these spicy mashed potatoes and fill our buttery, flaky dough with it; making a true comfort food.
